Cinnamon is has been in use since biblical times for its fragrance, medicinal and culinary properties. This delightfully exotic, sweet-flavored spice traditionally obtained from the inner brown bark of Cinnamomum trees . It is considered to be subtle and more aromatic in flavour than cassia and it loses much of its flavour during cooking. cinnamon sticks (quills) have many thin layers and can easily be made into powder using a coffee or spice grinder.
