Buckwheat flour, known as kuttu atta, traditionally used for fasting-day flatbreads and pakora.
Kuttu atta is flour milled from buckwheat, with a distinctive earthy flavour different from wheat atta. It is traditionally used on fasting days when wheat flour is avoided, though it also appears in other recipes.
Mix with water or mashed potato to make a dough for kuttu ki puri or paratha, or whisk into a batter for pakora.
